What
in the world is the "Gumbo Cookoff"?
According
the the Greater Iberia Chamber of Commerce:
"A major fund
raiser for the Chamber of Commerce, this two-day event draws an enthusiastic
crowd of 18,000 gumbo tasters. Gumbo Cookoff teams compete for the title
of 'World Championship Gumbo Winner.' This event draws locals
as well as international tourists. This is truly 'Cajun culture'
at its finest!"
Approximately sixty
teams compete in professional and amateur categories. Teams cook the
Gumbo
on site the morning of the competition, including the roux. Gumbo goes
on sale later in the morning, so visitors can sample the entries for
$2.00
to $2.50 per serving, depending on the variety.
